WFD?

Help from all the Momma's that read my blog I need some suggestions. We went grocery shopping on Tuesdays and I feel I got all the essentials except... Onions! I can't think of anything that doesn't need onions. Luckily I found something on all recipes.com that had ground beef and no onions. We'll see how it turns out. So here is my question(s) what do you cook when you don't feel like cooking, what are your stand by recipes, what ingredients do you always have on hand? email me if you wish...

check out my blog and look at the tortilla soup recipe. You can add canned chicken to it, too. It's good and only takes about 10-15 minutes from start to finish.

I think I'm headed over to Christina's blog after this...but I'm going to add my Chicken Marsala recipe. It's great because once you make it once you should have enough of the ingrediants on hand for a second time. I always stock up on these ingredients anyway because it's a great, easy dinner.

4-6 boneless chicken breasts (or a pork tenderloin - pounded to about an inch thick)
1Tbs. tomato paste
1C red cooking wine
1C marsala cooking wine
1 garlic clove (I just buy the garlic already ground up in the container)

brown meat in 1Tbs. oil and 1Tbs butter. Take out, add garlic and saute. Mix wines & tomato paste, until well blended (I usually lower the stove to LOW at this point). Add meat, allow meat to boil in this then lower to a simmer. I always let it simmer covered for about 15 minutes, but 5 is sufficient.

Serve over egg noodles, using cooking wines as sauce.

SOOO yummy and easy!
